Chiang Rai’s useful food shortlist begins with northern dishes, not generic restaurant rankings. Try a noodle breakfast or lunch, then use an evening market for snacks and dishes you have not ordered yet.
Nam ngiao and khao soi
TAT highlights nam ngiao, a northern noodle soup with a chilli-rich broth, herbs and toppings, as well as khao soi with coconut curry broth and crisp noodles. Specialist shops may focus on one dish and close after lunch or when portions sell out.
Ask about meat choice and heat level, but remember that fermented soybean, shrimp paste or other seasonings may already be in the base. Travellers with allergies should check the broth, not only visible toppings.
Sai oua, chilli dips and walking streets
Lanna meals can include sai oua sausage, nam prik num, hang lay curry, pork rinds and local vegetables. Sharing several dishes gives a clearer picture than ordering the same familiar curry at every stop.
